William Leigh

William is the Taste Assistant at Green & Blacks. He works alongside Micah, the Head of Taste, creating our new chocolate bars, experimenting with new recipes and tasting interesting ingredients from around the world. He also manages to keep the rest of office happy with regular afternoon baking sessions.

We found William amongst a cast of thousands - over three thousand people applied to be Micah's Taste Assistant. William had to go through a series of taste tests, interviews and cook-offs before the panel decided that he was the perfect candidate.

Like Micah, William is verging on obsessive when it comes to food and chocolate in particular. Rare are the days that don't see the two of them engaged in some heated discussion over which is the best variety of apple, where to find the best butcher, which country produces the best olive oil or whether bananas are a bad thing. This passion extends into the prep kitchen, where William and Micah constantly strive to find the most delicious ingredients to put into their chocolate bars and recipes.

Although chocolate is William's primary obsession, his cooking has been inspired by extensive trips into South East Asia and he adds chillies to virtually everything; there's even a bottle of chili sauce that sits on his desk 'just in case'.
